This plant-based version of the classic Italian dish reimagines traditional ingredients to craft a delicious and satisfying meal that’s kind to both your taste buds and the planet.
Vegan lasagna is a delicious and plant-based twist on the classic Italian dish, lasagna. The origins of lasagna can be traced back to ancient Greece and Rome, where they were early pioneers of layered pasta dishes. However, the modern version we know today, with pasta, cheese, and tomato sauce, is distinctly Italian.
Traditional lasagna is made with layers of pasta sheets, ricotta cheese, mozzarella cheese, tomato sauce, and various fillings like ground meat or vegetables. The vegan version of lasagna replaces dairy-based ingredients with plant-based alternatives, making it suitable for those following a vegan or dairy-free diet.
The popularity of vegan lasagna has grown significantly in recent years as more people embrace plant-based eating for health, ethical, and environmental reasons. This dish allows vegans and non-vegans alike to enjoy the comforting flavors of lasagna while supporting a cruelty-free and sustainable lifestyle.

Ingredients
Step-by-Step Instructions
In a skillet, heat olive oil over medium heat.
Add chopped onion and minced garlic. Sauté until the onion is translucent.
Stir in crushed tomatoes, dried basil, dried oregano, salt, and pepper. Let the sauce simmer for about 10 minutes.
In a mixing bowl, combine plant-based ricotta cheese and chopped spinach. Mix well.
Preheat the oven to 375°F (190°C).
Assemble the lasagna layers: Spread a thin layer of marinara sauce on the bottom of a baking dish. Place 3 cooked lasagna noodles on top.
Spread a portion of the ricotta-spinach mixture over the noodles.
Add a layer of marinara sauce and a sprinkle of shredded vegan mozzarella cheese.
Repeat the layers until you've used all the ingredients, finishing with a layer of marinara sauce and shredded vegan mozzarella cheese on top.
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let the lasagna rest for 15 minutes before slicing and serving.
Garnish with fresh basil leaves before serving.

Nut Alert: Some vegan cheese alternatives may contain nuts, so be cautious if you have nut allergies. Check product labels for allergen information.
Wine or Drink Pairing:
Pairing drinks with vegan lasagna can enhance the dining experience:
Red Wine: A medium to full-bodied red wine like a Chianti, Merlot, or Sangiovese pairs well with the rich tomato sauce and savory flavors in the lasagna.
White Wine: If you prefer white wine, opt for a crisp and acidic variety like Pinot Grigio or Sauvignon Blanc to balance the richness of the dish.
Non-Alcoholic Options: For non-alcoholic pairings, consider sparkling water with a squeeze of lemon or a refreshing herbal iced tea.
Storage and Leftovers:
To store and enjoy your vegan lasagna to the fullest:
Refrigeration: Place any leftover lasagna in an airtight container and store it in the refrigerator. It can typically be kept for up to 3-4 days.
Freezing: Lasagna freezes well. Divide it into individual portions or freeze the entire dish in a freezer-safe container. Use within 2-3 months for the best quality.
Reheating: To reheat, place the lasagna in an oven preheated to 350°F (175°C) for about 20-30 minutes, or until it's heated through. You can also use the microwave for quicker reheating.
Customize: Feel free to add fresh herbs, a sprinkle of vegan Parmesan, or a drizzle of olive oil to refresh the flavors when reheating.
